I have a similar set for linzer cookier--they're stamp cutters. Here's a set that has Thanksgiving shapes but I couldn't find the exact set they use here.

I have leaf pie cutters from Sur La Table, but I believe they are out of stock since I couldn't find them on their website (or anywhere online, strangely). I have a similar set to this.

I also have this kit - it's not intended for pie dough, and you can tell when you use it, but I don't really mind, and I love having all these shapes to choose from.

The targ stamp had a lot of detail that didn’t really come out but otherwise they worked pretty well!! Make sure to coat the stamp liberally in cocoa powder before pressing into the dough otherwise it sticks.
