Ukrainian living in the Midwest here. How long did you cook the groats? I find that after fifteen minutes mine get mushy. You could try toasting in butter beforehand too.

Bob's Red Mill is what I find in local stores, you can get it online ( https://www.amazon.com/Bobs-Red-Mill-Organic-Buckwheat/dp/B000EDBPZC ). Might be other cheaper brands out there but I have not really looked into it. A friend of mine has Celiac's and gluten causes the opposite effect on her along with several discomfort. Not sure what that is - couldn't hurt to try a probiotic (kombucha or vegan yogurt) to get things moving.
