pretty much every hardware store in town has a display that will help you to determine the diameter and thread pitch of nuts and bolts. I would take that nut that you have and try to determine what size it is. If it is a common size, you should be able to pick a bolt that is about the right size and style for your table.

As for the spacers, that might be a little trickier. You could try buying something like these Neoprene spheres and drill your own hole through the center.
