thinly slice some citrus fruits, (orange, lemon, lime) etc. muddle these just a bit and pour water over them into a large pitcher. I would go with just the lemon and lime, (kind of like a 7-Up flavor) maybe add some sparkling water to it.

Grapes, oranges, apples.

strawberries, blueberries, maybe even a blackberry or two (they are strong and will take over the flavor) maybe a little mint...

Basically just fruit and water. You can also buy these style pitchers for keeping them

I freeze and press my tofu all the time. It works great for making crumbled tac filling or just to get some extra texture. If you use tofu a lot I recommend a tofu press like this. I find it makes quick work of draining.

Do you think this will work?

After thawing, I just need to get the water out without deforming the tofu cake. I was thinking pressing it in a tofu making mold may work too. As you do it regularly, I thought I should ask. Thanks
