I've tried most of the ones that others have commented on and I settled with this one: 4Knines Rear Bench Seat Waterproof Non-Slip Cover with Hammock. Seriously the best thing ever. The non-slip coating on the back keeps it in place, the hammock piece that clips up to the front passenger seats keeps my boy from jumping up front or getting my front seats dirty. I have the same thing for my front passenger seat too just incase I have him up there with me. 4Knines Fitted Bucket Seat Non-Slip Cover. One thing that I like about this brand over others I tried is that the covers have flaps that go down and actually cover the side of the seat too. Especially helpful in the back seat to make sure fur and stuff doesn't get everywhere.
 
I also invested in these handy little things. NAC&ZAC Waterproof Pet Car Door Cover They keep my boy from scuffing up my doors with his giant paws.
 
Let's see, what else. Oh, I got the cargo net for holding leashes and doggie bags. Genuine Subaru F551SFJ100 Cargo Net, Rear I also keep window cleaner and dash cleaner in there to clean up dog sneeze goo and slobber.

It has velcro slots to fit your seat belts through it. I've only had it for a week but it seems to work. I got this one so our dog doesn't jump into the front seat area.

I bought it as a car seat cover, but it has a handy feature where the front can attach to front seat headrests, creating a barrier. (Take a look at the product photos and you'll see.)

Combine it with high-value treats for staying behind the barrier, and my dog doesn't even think about trying to jump it anymore.

Any portable vac will be good for things like crumbs, pebbles, and larger clumps of hair, but for cleaning upholstery, especially inside the car, I use one of these things: https://www.amazon.com/Gonzo-Pet-Hair-Lifter-Furniture/dp/B000209Z2C It actually does a fantastic job of removing hair, is reusable, and easy to clean. It can take a little bit of getting used to to start, but I've honestly not found much better, especially anything reusable.

But more importantly, a back-seat hammock cover has been a GODSEND for my car!! This is the one I use, and it keeps the back seat safe from muddy paws, drool, any potential accidents, and 95% of shed fur. https://www.amazon.com/gp/product/B00DQFZGZ0 It is easy to set up and stays in place - also easy to clean since I can just wipe it down, vacuum it, or even throw it in the washer if I absolutely have to. Also has the benefit of hiding the floor of my back seat. I drive a Nissan Cube so I don't have a covered cargo - this thing lets me hide things during shopping trips where I can't drop anything off in between stores.

Before I got that little hammock, I would just keep an extra blanket or a couple towels in the backseat, and that did a fair job at keeping things at least manageable, so long as I remembered to shake them out or replace them every few trips.
