A USB to RJ45 cable will probably work fine.
I've never used one, and I don't see any such cables with long histories of positive reviews & glowing feedback.
But I have used USB to DB9 serial adapters, combined with traditional DB9 to RJ45 Cisco Console Cables for years, with excellent result.

I haven't seen any in my travels. A USB hub and a bunch of these could work, but if you want the

All switches are L2 by definition.
Console cables for network equipment are pretty standard, something like this would probably get you going. However, I don't know that thing off the top of my head and my older Dell gear just takes a null modem cable.
I just bought this to replace a different that died after 10 years. I cut the cable shorter and just you a RJ45 coupler.
USB-C converters are a non issue because they are cheap and everywhere. I have like 5 in my bag of different types. You can get insanely good docks now for usb-c. I have a totu one that i liked so much i bought one for my bag solely.

I have used a mac for almost 10 years solely. I would never go back. Another thing that is fantastic about macs is network locations which I use a ton for each site i visit or for new setups that I do.

No experience with ExpressCard to serial but I have had good experiences with this USB-serial cable.

I use a similar one for the Cisco Switches at work and they work great. Usually the console cables for Cisco also work on ubiquiti hardware.
