Airpods do not support aptX LL. When I have tried them with a aptX LL devices even like the one you have there is a significant delay in the audio. The Sennheiser Momentum do support aptX LL so those would be fine.
Anyways if you have plans on using ALVR for streaming PC games to the Quest, streaming your Quest to your PC using adb or just want to use wireless headphones I suggest getting the Avantree aptX Low Latency Wireless Transmitter and Receiver Set because it would be $10 cheaper than buying two individual devices.
Here they are. This photo is an example of a way I would never use it but it can be used that way. I originally used the device you had and the TROND model which supported aptX LL in both TX and RX but had issues sometimes pairing them together. I would not use anything with a high ohm for the headphones or else the volume level and quality will suffer. My beyerdynamic Custom One Plus work fine but my beyerdynamic Custom Studio which is 80 ohm do not.
The reason I mention ALVR is because if you off load the streaming of the audio to Bluetooth you can save on bandwidth and latency.

Yeah I feel you. I was looking into a wireless 3.5mm transmitter and receiver to plug into the output of my sonos bridge and then plugging receiver into the rhythm module to improve response time without running a long wire. Theoretically the one below would work as long as your home theater system allows additional output. For now it wasn't worth testing the idea for then available wireless transmitter/receivers I found on Amazon. I can't justify $50 to remove a few ms of delay
It would be nice if there was a Nanoleaf solution for it since depending on the shape of the room and placement of speakers it might only pick up partial sound.

Ive also been able to plug them into my Denon reciever and get audio while using my TV as a monitor with my PC.
It works out great. Initial setup is a whole thing though.
I use the scrcpy method with these as transmitters and this as an external mic. I run everything though OBS and have 0 latency. I stream everything live on this facebook page so you can see for yourself how it works if you like. You could do the same thing of course with Twitch. Not the cheapest method I admit but it's the best method I've found for latency.

Most pc manufacturers (and Apple) put crap bluetooth transmitters into their machines. They're high latency and the built in drivers suck on both Windows and Mac. What avantree has done which is genius is they basically make their transmitters operate without any interaction with your operating system or pc hardware. Just plug it into your microphone port and win :-).
They do have some background noise if you leave them plugged into usb to charge (not grounded well). But if they're running on their internal battery then they'll transmit no problem.
Can always return if it doesn't work well for you. You'll probably need an adapter for a good mic to work with the 1/8" audio jack as well.

Normal bluetooth headphones will be terrible. However, there is a norm that offers decent delay, APTX low latency (caution: "APTX" by itself doesn't mean low latency, look for "APTX low latency"). From my experience, the delay is not a deal breaker. I'm not very good at scoring anyway, but I don't feel too handicapped by the delay (which should be around 30ms) when playing casually. My steps definitely are very slightly off, but it's not ruining my fun.

Could you splice, (or audio isolation transformer) one of the wired outputs, (say left side + -) and run a cable to one of these? and then that would go to your remote speaker (assuming mono, but look up if this is aval in stereo, if required.)
