I have a Bosch 2.5 gallon electric water heater which works great.
I have a pretty robust electric setup (400 Ah battery capacity, 400 w solar, 3000 w inverter), but I could probably get away with less.
You're also going to need to be able to do the rough in plumbing, which is fairly straightforward but might be challenging if you're not particularly handy.
