I can attest that I have pushed the bounds of my Anova using a cooler and it handled it without issue. It will keep ~25 quarts at 180 indefinitely, although it does struggle if you take the lid off and check the cook often.

I cut a hole in the top of a "Coleman 24-Can Party Stackable Portable Cooler". It works great. I'm sure that could work for the Aicock.
