When you hook the up, you have to go into the PS2 system configuration and change the video output. There are two options. Don't remember what they were called, but just switch to the other option.

if you're using an HDTV, this is mandatory.
Just so you know they did end up making Composite cables for both PS2's and they are fairly cheap. So you can play your PS2 games with your HDTV if they have a composite cable slot. I have a huge ps2 collection so I will not be re buying all my games.

Turn on your PS2 without a disc inside. You can set the output to be CYMK and widescreen. It looks great and clear on an HDTV.
I used a cable like this to get a really nice-looking FF12 session. Some games support true HD settings.

You're thinking of composite. Component is the 5 plugs, orange-blue-green for the video and a red-white for audio. Something like this, http://www.amazon.com/gp/product/B00005MDZD
Also, the plug for ps2 and ps3 cable is the same, so a ps3 compatible component cable should work with a ps2.
While we are on the subject I was hoping to get some advice on component cables for PS2. The one I'm looking at someone said they had trouble playing PS1 games on the PS2 using this cable, is that normal or are PS1 games not compatible with them?

What I'm doing, and this is the best quality PS2 video I've managed to conjure up on my HD projector, is using a PS2 component cable and a component-to-HDMI converter. There are a lot of different kinds of converters than the one I linked here. My receiver doesn't have HDMI, so I'm converting the receiver's component out to an HDMI hub.
I used one for mine. This specifically should work with most HDTVs. I say most because I have no idea if a 4K TV for example has it.
Amazon has sellers that have the Playstation2 component cable.
Do you also need the power cable? I believe the PS3 power cable will work. So will any Vizio TV power cord, as well as a few assorted electric razor cords, boombox cords, and some older printer/scanners. (This only applies to the fat models!)
As for the video cables... We need to know a little more about your TV. Does it only do composite (3 plugins) or will it also do component (5 plugins)? If it will do component, I'd go with those. It's a much clearer picture on modern flat screen TV's.

Thank you so much!! :) Sounds like component cables might be the way to go for now then. If I was only doing PS1 games, I'd probably get SCART, but I'm doing a mix of PS1, PS2, and even some Gamecube games, and it sounds like component cables will cause the least amount of compatibility issues.
There is one last small question I have. I was looking at the PS2 component cables here, I noticed that the D-Terminal to Component Adapter that I can buy with the Framemeister has only 3 female sockets, when the PS2 cables have 5 cords. Is this normal, or am I looking at the wrong kind of PS2 cables or something?

I second the comment on component cables. I changed over to them on my HDTV this year and it was like a revelation. Well not that big a difference but all the blurriness went away. Gamestop used to sell a special component cable that would work with PS2, PS3, X360 and Wii, but I can't seem to find it anymore.
These are the cables I bought and they work fine.
Buy these cables (or similar ones) and hook up the ps2 with them assuming your tv has the inputs.
One of the reasons it looks bad is because all the video info is squeezed into that one yellow cable, so the quality gets degraded.
The component cables in the link send different parts of the video through different wires, so the quality is really good.
It wont look perfect, but it will look a lot better.
