Nikkei here. The mochi ice cream was invented based off the daifuku and gyūhi popular in Nikkei wagashi shops.   1. I had so much of these in Japan so I bought some on amazon when I came home to Ireland. They are Daifuku! Kind of like a cookie dough consistency, containing a thick jam.
