For $500, the Pentax K-50 body + 18-55mm WR lens + 50-200mm WR lens is one of the better bargains out there. It comes with the body + two lenses, and the entire kit is weather sealed (which may come in handy if you're planning on being outdoors a lot and the weather turns nasty).

If you're looking for something smaller, lighter, and still a DSLR, but lacks weather resistance and comes with 1 lens instead of two, the Canon SL1/100D + 18-55mm is another option.

Finally, if you want even smaller, there's mirrorless cameras which trade size and weight for worse battery life compared to DSLRs. Something like the Olympus E-PL7 + 14-42mm would be a decent start.

Small enough to fit in your purse or cargo pants pocket.
8 frames per second burst mode with continuous auto focus.
Almost instant on.
HD video capture with one button.
Selfie mode.
iphone and android app for remote shooting.
Interchangeable lens and this format has some awesome fast prime lenses (no zoom, great in low light, nice blurred backgrounds)
Decent kit lens with zoom (I still use it when I am traveling light weight, but have the much nicer PRO zoom in my camera bag.)

I've owned the EPL3, EPL5, and EPL and loved them all.

Thanks for the quick reply! How up-to-date are these links? I've noticed that a lot of the articles I've read even being only a year old lose a lot of accuracy. It seems all these cameras with the provided links to amazon are 500+. The mirrorless link mentioned an Olympus camera and I happened to be looking at these 2 earlier:
