Nikkei here. The mochi ice cream was invented based off the daifuku and gyūhi popular in Nikkei wagashi shops. Not ice cream, Mochi daifuku!
They make a green tea flavor as well. I prefer the red bean, but if you've never had it before, the texture can be really off-putting.
