Use something like this. I picked the 32G as that allows you to install both esxi and vcenter on it.

It solves the issue of a dongle sticking out with the small form factor.

You have to be careful with anything you keep from the old system. MIDI files are a rather unlikely potential attack vector, but I wouldn't just copy them over personally.

That said I would definitely keep a copy of pretty much everything... you never know. If you end up needing something you could open it inside a virtual machine (look into virtualization software like HyperV, VirtualBox, etc., or even a whole separate machine in the future (I've bought perfectly working old laptops on ebay for $20 shipped, lol).

Here's a USB stick you can get for six dollars to keep (some of) your old files.

Burning the most important files, at least, to some DVDs is a decent option too.

My understanding is FAT32 format is generally capped at 32gb (based on OS though). I bought ScanDisk 32gb and have read a few threads on here about not using anything above USB 2.0.
