There was a book published 15 years ago called Socrates Cafe that's all about starting philosophical conversations with non-intellectuals. There are several cities that hold monthly Socrates Cafe sessions, here's a listing but I'd recommend searching for "Socrates Cafe <yourCityName>". The one in my medium-sized Southeastern city meets at a health food store.

While it isn't something you can use directly with students I think Socrates Cafe will help inspire you on ways to get the students talking and thinking.
Besides that of some of Plato's dialogues, The Myth of Sisyphus, Descartes' meditations, and John Stuart Mills' Utilitarianism,while probably covered by your text, I feel that the primary texts are accessible enough that you could probably make them the readings or at the very least make a list of them available as review topics for a final paper.
