Be careful of the sushi. Roe and squid will have gluten (soy sauce) on them already. Octopus might as well. If you can get to know them and call ahead, they might be able to make your sushi first thing and put it in the fridge before they start making everything with gluten in it.

Most mochi is ok, but I don't know what brands to get.

It's an excellent place to get super fine ground white rice and tapioca flour for cheap.
Rice noodles and rice paper (although that's Vietnamese so they might not have it). If you are lucky they will have rice macaroni (the stuff I got is Chinese so probably not). Stay away from Soba noodles. They are buckwheat but have gluteny wheat in them as well. I've only ever seen 100% buckwheat soba once.

Like other people have mentioned, you can buy most/all of these in the US, but I know that Tennessee doesn't exactly have a big Asian population so it may be harder there. And snack exchanges are fun! So don't let me get in the way of that. Just in case you ever needed to know for the future.
A alot of snacks here are from neighbouring countries like malaysia and stuff, but these , these and these. <3
Also, we have these mostly during chinese new year, but it's sold all year round and is freaking awesome. :D
