I have had excellent results with something like a Blue Snowball mic and the iPad Camera Adapter Kit (USB).
Basically, the USB part of the Camera Adapter Kit (get Lightning or 30-pin, depending on your device) adds a USB port that you can use with pretty much any USB mic. You have to be careful about mics that draw too much power, so it won't work with ALL USB mics, but I've used the Blue Snowball, and several other USB audio interfaces (like an M-Audio Fasttrack) with really good results.
You could also get a dedicated mic, like the Blue Mikey or the new Zoom iQ5B, but IMHO, the USB adapter from the camera kit plus a good USB mic gives you a lot more flexibility. Plus, it lets you do fun stuff like plugging in a MIDI controller (like the Novation Launchkey) for making music in GarageBand and other music apps.
