My overall recommendation is you put a multimeter on your finished display using the supply you already bought, and see what kind of power it draws once you're done with your animations, and then determine what you need. So the power supply you linked doesn't have a connector. The wires from 220V has to be connected manually, either split or by using an adapter on a 5V wall plug: https://imgur.com/a/chAF85f
This seems like a decent solution if I'm not comfortable (yet..) stripping wire, so I'm wondering what kind of cable I would need between the PSU and the adapter :)

The ESP board then only has to send the control signal.
