It's not a bad idea but it's in the details.
"Expensive multitool" is not very expensive IMHO. Topeak Hexus II is about $30, including chain tool and tire levers. Are you going to carry chain tool? Tire levers? Spoke wrench? The price difference isn't worth the trouble of carrying small bits of stuff in saddle bag. I also have used the spoke wrench on this when a spoke broke on friend's bike. We adjusted the remaining spokes and was able to get a few more miles toward the destination.
In some cases, when the bit is short, it doesn't work. It happened to me when I tried to adjust the seat rails that needs M5. But one of my multitools M5 was very short and stubby and couldn't reach to the seat post's bolt. So, this particular multitool was a dud.

If you're going to be carrying the tool anyway, it might as well have tire levers. I think it's a cardinal sin that not all multi-tools have them. Have you ever tried changing a tire without it?!
