You can use a USB to VGA video adapter - $55 for one of the displays and a standard VGA adapter for the other.

I use the Diamond Adapter for my 2010 13" MBP. I am extremely happy with it and sometimes forget which monitor is the usb monitor and which one is the mini display port. There is barely any noticeable lag. Lag really only becomes a problem when trying to watch videos. For surfing the web, photoshop, coding, creating word documents, it works great! Highly recommend. Nvidia Cards that are of the 500 series and below can only output to two displays at once at most. You are going to need adapters like this. Be aware that USB video adapters are not very usable for anything besides what you want to do. Videos and games will not run reliably on them.

If you just need another video output for basic graphics like text or spreadsheets you can use a USB to DVI/VGA/HDMI adapter with a DisplayLink chipset.

I got one pretty cheap by MyGica for about $25 after rebate and it will even do 720p video watching output. 1080p was a little choppy but doable. For basic text it works great.

I run two 21" external displays on my 15" MBP. One connects thru the Mini DisplayPort, the other connects via USB thru this:

If you're using Apple or Windows, it's pretty easy but it'll take a while to set it up on Linux.

For Apple,
You can either daisy-chain Thunderbolt with these
Or you can get something like these and do this


For Windows, 1 and 2

If you're getting monitor, might as well get one, look for one that can pivot. Basically you can turn these monitor from landscape mode to portrait mode. Best used if you do a lot of reading or writing/coding.
