The good news for you is that your perception about this is wrong. USB-C is all about having one unified port type for all our needs... power, video, data, etc... It's an extremely fast connection and really can't be matched with wireless today.

The 2015-2016 MacBook has one USB-C port, and while personally I think that was a mistake on Apple's part, it seems highly unlikely that the MacBook Pros wouldn't have more USB-C ports.

Don't worry so much about existing devices. In addition to multi-port dongles and hubs, there are already cheap adapters:

You could simply buy one of these for each USB cable you're currently using on non-USB-C computers and just leave it attached.

I have a bunch of different Macs that I use daily and a bunch of different devices that I need to plug into them. I purchased a 2016 MacBook and have been very pleased with it. I'm hoping all of the new MacBook Pros come with USB-C ports because I plan on getting a MacBook Pro as well.

Yes, but much of my answer here likely won't apply to the MacBook Pros which will likely have multiple USB-C ports.

To begin with, I upgraded my portable drives to 4TB and my desktop drives to 8TB. This allowed me to better consolidate my media/projects so that the likelihood of needing 2 drives to be connected was greatly diminished.

Also, it took a while, but I'm getting used to the fact that the MacBook doesn't need to be plugged in for power during pretty much any time period that I'd be using it. Meaning that there was a fear that I would plug in a drive and start a project with it only to find I have to do something like cancel rendering mid project to unplug the drive to plug power back in. Stuff like that hasn't happened.

It would still be far more convenient for me (and many others) to have two USB-C ports on the MacBook than to have the insignificant space/weight savings of only having 1 USB-C port on the MacBook, but it's really not a deal breaker.

TL;DR: Unlike the 2015-2016, the new MacBook Pro will likely have multiple USB-C ports. You'll be fine with the already large selection of available adapters, dongles, or hubs for now, and will be well positioned for future products that will be USB-C based.
