OXO garlic press. Heavy, sturdy, gets almost all the flesh through the holes, and takes less time to clean than to chop it with a knife in my incredibly tiny kitchen.

Garlic press unless I need tiny little pieces. I've snapped a couple of presses and now I've got the Oxo brand which is fantastic. If you're going to buy a press, this is The One.

I use an Oxo Garlic Press and while I do find I get more yield from mincing it manually, as I still do on occasion, I can stick the whole clove in there, press it right into the pan, clean out the husk and rinse it off (although it is dishwasher safe). The press is nice too when you have multiple little cloves that are just too small sometimes to mince, I'll stick 3 of them in the press at a time.

Also, sometimes, when I get home from work and want to get dinner on the table sooner than later, it's tiny shortcuts that help. I am completely unwilling to buy pre-minced garlic in a jar.

My most recent:

I was making dinner and needed to mince some garlic so I get out my garlic press , plop the garlic in, and squeeze.... only to realize that it was indeed NOT a garlic press and in face a lemon juicer. So I mistook one of these for one of these. Yeah, I felt dumb.

You can't beat cutting up your own garlic. That said, I'm a parent now so I generally reserve that kind of effort for a fancy dinner for the wife. Everyday use, I fall back on the bajoon (I claim rights to this word) of garlic.

Onions are fucking easy to cut up quick though. Peel it, cut it in half (top to bottom). Then take a half, and cut it along the lines (the ridges that go top to bottom on the onion. It's a built in "cut here" guide. That's how you julienne that shit. Then if you want small pieces, you just go one step further by turning the onion-half 90-degrees and cut perpendicular.

Final tip on garlic. Get a garlic smasher. It helps speed things up a little.
Just peel the garlic, stick the clove in there and SMASH. No cutting or mincing necessary. Also, look at shallots if you want to up your onion game. Less to cut up, big flavor.
