u/michael-chiang-mc5 - with a $2000 budget, I recommend a setup with two high quality 4K cameras with a couple of fluid head tripods, an external audio recorder with headphones, a pro XLR shotgun mic, a boom and a shock mount.
This setup would consist of two $397.99 Panasonic FZ300 superzooms with SD cards, a $199.99 Zoom H4n recorder for sound, a $74.99 set of Senal SMH-1000 headphones, a $239.99 Azden SGM-250 dual battery/phantom powered shotgun mic with an XLR to 3.5mm impedance matching adapter for recording directly to the camera when needed, a $9.99 Smallrig shock mount, a $38.99 Pyle Mic Boom Pole to swing the mic , a $3.95 OnStage MA100 adapter to connect the shock mount to the boom, a $7.99 PylePro 15' XLR cable to connect the mic to the recorder and two $139.96 Ravelli Professional Fluid Head Tripods to mount your cameras.
This kit comes in at $1650 - leaving you $350 for food :)
Your cameras will have 4K resolution, an external mic jack, a swiveling LCD screen so you can see yourself when you're in front of the lens, a built-in 24x constant aperture f/2.8 lens - plus it records 60 fps at 1080p and 120 fps slow motion at 720p.
Here is the 4K image quality the FZ300 can produce:
Here are a few examples of live performance/fashion/music videos shot with this camera:

Here is an FZ300 travel doc:
Here it is shooting 120 fps slow motion
It's a capable still camera too: https://www.flickr.com/groups/2860985@N20/pool
I have the FZ300's predecessor, the FZ150 (pictured here with an external mic), and the FZs are great little video cameras.
With its higher resolution and faster lens, the FZ300 is even better than my FZ150.
Hope this is helpful and good luck putting together the right setup for your needs!
Well the MKE 600 comes with a little clip that can slide into the top of most dslr and mirrorless cameras, and it also has a 1/4 inch thread. So if your mic stand has a 1/4 inch bolt on the end you don’t need to buy anything else. If you do want to buy something or need a different size thread (I️ actually think 3/4 inch is pretty standard on mic stands) then maybe look into something like this: https://www.amazon.com/gp/aw/d/B06XWQG27X/ref=mp_s_a_1_1?ie=UTF8&qid=1511589050&sr=8-1-spons&pi=AC_SX236_SY340_QL65&keywords=shock+mount+for+shotgun&psc=1
I️ found this by searching for shotgun mic shock mounts.
They make nicer shock mounts but this will get you going and making some videos.
This is the only one I could find that would fit:
