Oh yes super simple:

Salty chocolate disks

1/4 c coconut oil
8-14 grams of Xyla (xylitol) xyla
Sprinkle of stevia
1 TBSP Cocoa powdercocoa
1/2 tsp Sea salt or more - I love salt.

I use a 24 cup mini muffin tin and this make exactly 24

  1. Measure xylitol. If you want a crunchy consistency, which I love about these, continue to step 2.
    Use a rolling pin to crush the xyla into a fine powder.
  2. Melt oil in a microwave safe bowl for 30 seconds or until liquid.
  3. Add xyla, cocoa, stevia, salt. Throughly mix cocoa in and make sure there are no clumps of powdered cocoa.
  4. Using a small spoon stir and pour one spoonful into each mini muffin cup. Should make 24.
  5. Place in freezer for 15 min
  6. Use a spoon to tap the edge of the chocolate to coax it out of the tin. Do not scrap side with knife! It will expose metal and your time might rust or get metal in your food.
    Store in a container in the fridge.

    I also made a sandwich of these with a fatbomb cheesecake center:

    1 c heavy heavy whipping cream - cold
    2 oz cream cheese
    1/3 small package of sugar free jello
    Vanilla paste

    Blend all ingredients in food processor or hand mix until thick.

    Place frozen salty discs onto a cookie sheet or plate.

    Place fatbomb mix in a small ziploc. Cut the bottom tip of the bag off. Pipe onto disks. About 3/4” high. Top will another disk, press down slightly.

    Freeze on sheet. Approximately 30 min.

    Store in freezer for hard consistency or fridge for soft consistency


    Other thoughts:

    I am going to try to add vanilla bean paste into my next batch. Or make a white chocolate version. Or peanut butter!

    Can use triple distilled coconut oil from Trader Joe’s or regular coconut oil. I like the regular one more. It makes it more luxurious and complex in flavor.

    You can probably do this will all stevia but I hate the aftertaste, which is masked by the coconut oil.

Xylitol is actually a sweetener that's tooth-friendly and was recommended by my dentist. It interferes with bacterial growth and doesn't allow micro-organisms to grow like sugar does, so it means less cavities and damage to teeth. It doesn't taste quite as good as sugar or Splenda, but it's a good substitute. Also, no aspartame.

Ingredients


  • 2 cups unsweetened nut milk macadamia or almond
  • 2 cups heavy cream or coconut milk*
  • 1 cinnamon stick
  • 1 teaspoon nutmeg freshly grated, plus more for garnish
  • 6 egg yolks
  • 1/2-3/4 cup xylitol allulose or erythritol (I use 1/2 cup)*
  • 2 teaspoons vanilla extract
  • 1/2-1 cup dark rum or bourbon to taste

    Instructions


  1. Please see recipe video for deets and tricks!
  2. Add nut milk, heavy cream, cinnamon and nutmeg to a medium saucepan and simmer for about 8-10 to infuse. Remove from heat and set aside while you prepare the yolks. 

  3. Add egg yolks and sweetener to a large bowl and, using a whisk or an electric mixer (easier), beat them until light, fluffy, and most of the sweetener has dissolved (if using erythritol, some granules will remain). 
  4. Gradually temper the hot mixture into the egg and sugar mixture. Tempering means adding the hot milks (very!) little by little to your egg mixture while whisking constantly, so your eggs don't curdle.  

  5. Return everything to the saucepan, and cook over medium/low heat for roughly 8-10 minutes, or until your mixture reaches 160°F/70°C and coats the back of a wooden spoon. Remove from heat and sieve onto a medium mixing bowl. Stir in vanilla and liquor of choice, to taste. Cover and transfer to the refrigerator to chill.

  6. Your eggnog will continue to thicken while chilling. So give it a good stir right before serving, and feel free to thin it out with a little nut milk until desired consistency is reached.

Fluorosis is very common actually, but for the most part it's not very noticeable. I wouldn't worry about it, just try not to let your child swallow much fluoride toothpaste before they reach age 7ish. It's not like it's a one-off failure, it needs to happen consistently for it to be noticeable. It sounds like you're doing well. If you want to really stay on top of their oral health, you should start using xylitol products. Xylitol kills the bacteria that causes cavities and prevents plaque from forming on their teeth, among a number of other beneficial properties. The goal is to try and get 5 applications per day.

Some health food stores stock it. Here in Aus, there are dedicated retailers.

If you're in the States, then you are so lucky, because Amazon lists a whole bunch. If you're paranoid about it coming from corn or China, there's items like this one which advertise that it's made from birch and made in the USA.

There's several chewing gum brands that contain xylitol, but I'm currently trying to track down a big name brand that uses 100% xylitol rather than a mixture.

Is this okay for xylitol packets? Or this one?

I already am supposed to not drink anything else/rinse after using my toothpaste at night so I don't know if using that MI Paste would be right or not according to my dentist. What is it, anyway?

I already like cheese.... but I will buy sunflower seeds! Thanks for the help.

Most recipes that I've seen are using Erythritol or similar but there is a mint-like cooling effect so some people like blends of Erythritol and Stevia like Swerve, which is of course more expensive. There is also Xylitol but it is toxic to dogs in case you have one.
 
There are a lot of sites with information on keto sweeteners including their GI and I highly suggest doing some research to determine which meets your needs and tastes. You will also likely have to try out a few. Also be aware that the taste of the same product (e.g. Stevia) from different brands (e.g. SweetLeaf vs NOW Foods) can be slightly different to people.

I've used xylitol to backsweeten my ciders. About 3 T/gallon will give a decent sweetness without being too overpowering. After adding xylitol you can just bottle as you normally would.

Don't fear the chemical-y name, its a natural sweetener from birch trees.

Xylitol is pretty good. Make sure you stay away from chinese Xylitol which is made from corn. You want real Birch Xylitol made in the US.

This is really cool, thanks for posting the guide. A second option, which I've used is to back sweeten with a sugar subtitute that doesn't ferment. I've used Xylitol with good results.

Baking Soda and Xilitol (this one looks like it comes from abroad. You could also check out the park n shop in DIP, I think thats where I purchased my Xilitol a few years ago when I was doing keto and they probably also have baking soda.

As for the bentonite clay, I cant find any that isn't for topical uses or in kitty litter...
