I recently bought a T470 with an i5 and can help with a couple of your questions.
1 - for my use (Microsoft Office, web browsing, streaming video), I went with this 16GB kit.
2 - I also went with the 500GB HDD. I kept the HDD and added [this SSD] (https://www.amazon.com/gp/product/B012ASBZEO/ref=oh_aui_detailpage_o01_s01?ie=UTF8&psc=1) into the open M.2 slot. I reinstalled Windows onto the SSD and wiped the HDD to use it as storage.
It's really easy to pop the bottom off and replace the RAM/SDD. The Lenovo video is an excellent guide to follow.

Looks like it dropped in price... I got it when it was $70.
I am using the ADATA 128GB ssd in mine without issues. Seems to be the more reliable brand.
