I was kinda torn when I built mine, but I ended up removing the passenger front and passenger rear (so I still have 2 seats in it) and put the fridge under the platform I built using unistrut over the entire passenger side. I used a Goose Gear rear seat bracket so I could keep the driver rear seat.

I'm pretty satisfied with it. I'm 6'1" so I didn't fit laying down, even diagonally in the back, so The decision was made to remove those seats
