The coating can get a bit funny if they absorb too much moisture, it will be more prone to cracking and spalling off while you're welding. As far as the puddle, that doesn't change significantly. Just keep them as dry as you can, something like this rod can will help. Throw some silica beads in the bottom to help.
The guy at my local shop recommended 6011 1/8" to start out. He said it burns through almost anything and is fairly easy to work.
I planned on ordering this when I ran out of the 10 lb box I bought locally.

Im still a beginner, but I saw a chucke2009 video where he compared the cutting rods to just running 6010 way hot and poking through with the rod and the cuts were extremely similar, and the cutting rods were like 2$ a piece or something. So really you could achieve the same effect with any stick welder ran hot.
