I'd never do this with my dog because I like havin her ride in the truck with me. But when I was a kid I'm sure I saw a product for sale in some department store or maybe as seen on tv but they used to make a harness for dogs to ride in back of trucks that seemed pretty safe apart from if the truck rolled. Which is fucking ridiculous I know but does anyone else remember that?

Call me obsessive but I ordered the following items to protect the backseat. This is what it looks like:

I lay this extender on the backseat first. It fills the gap and allows my dog to utilize the entire backseat space:

I then put this soft hammock above so I can further contain him by zipping up the sides:

It's doable-- you've thought about a lot of the main issues. The challenge with cars is not looking like you are homeless in a negative way that draws attention. Way back when, there were more car "vans". Folks would knock into the trunk and create a platform for sleeping. If you keep the platform narrow, you can leave one side as a seat that can serve a variety of uses.

I'd look into installing a pet barrier type screen directly behind the front seats so that after you tint the back windows, visibility into your back living area is significantly reduced. Something like this could be DIY using black shade cloth and pvc pipes.

Alternatively, you could buy a barrier that can be placed between the front and back seating areas of a sedan (kinda like in taxis and police cars). Something like this might even be a good temporary solution for everyday transportation if he's prone to sudden violent outbursts.

The more affordable ones are mostly intended for dog owners, but they might be helpful here, especially if you could install one of the mesh sheets and one of the metal barriers at the same time for extra coverage. A few examples below.

My 80lb Weimaraner and 45lb Vizsla rode from Denver CO to Rochester, NY and back last thanksgiving in the back of my crosstrek.

The fence for the back of the seat came from Amazon, and the padding on the floor my wife and I made by using the plastic tray as a template, then we cut the foam to fit, and she made the cover with her sewing machine.

Nothing against the Weathertec one, but my dog is a real dick when he is in the car and his whole goal in life is to get my seats hairy. If it has telescoping bars he will figure out how to move them.

The gist of this comment is I tried here different ones before I got one to fit. Some were even to big.
