I did this back in April when I got a new smoker. After grinding, both will turn hard as a brick. It shouldn't be a problem if you are immediately incorporating them into a bbq sauce, but just be forewarned, they like to suck in ambient moisture and form bricks!

These sheets work perfectly for smoking small things like individual cloves of garlic.

And your results may be better than mine, but the onion definitely gets super bitter if you try to dry it in an oven above 250 degrees. I had to throw it out.

To complete the story, here's a link to the Teflon cooking sheets I mentioned. They are thin, and can be rolled up. Solder, epoxy, paint, etc., do not stick to them, so they're useful if you do other "maker" tasks besides soldering, although they are not affected by high heat.

I had the same issue. Unlike you, didn’t realize it until it was too late. I melted my deck and put a hole in my BGE cover. It could have been much worse if I hadn’t seen the burning ember so quickly.

Anyway, I found a company on Amazon that makes a product for that very problem. —High Temp resistant floor mats and their not too expensive. I bought one and a fire extinguisher. Better late than never I guess. It looks pretty good, too.
