I've been looking for a way to disable my motion sensor in certain situations as well. The solution I came up with is to use a battery eliminator. Some Homekit motion sensors are battery operated. Then, when you get into bed, you can use a smart button to turn the smart switch off. Also, you can then ask Alexa to turn the switch off/on as well. If you really want to leave it on for extended periods, you may want to look into a simple battery eliminator like this. This will allow you to plug in your sign and leave it on for as long as you'd like.
Edit: Looking closer at your picture I noticed that you need a 3 volt battery adapter, instead of the 4.5 volt adapter I initially linked. I had a bit of trouble finding a 3 volt version in AAA but here is one example. Sorry it's a bit pricey, I would think if you searched a bit more you could find a better deal on a 3 volt AAA battery eliminator.
