A pound of pepper is only 45 tablespoons (http://www.cuisine-french.com/cgi/mdc/l/en/apprendre/infos_pratiques/equivalences/equiv_poids.html) [a pound is 450 grams, a tbsp is 10 grams, == pound = 45 tbsp). A household is going to go through that in just a few months.

Another data point: Amazon's 18 oz black pepper has a most-common subscribe rate of 4 months, and since this size is far too small for food-service I presume that's nearly all household use. Instant Pot Mushroom Wild Rice

  • 2 tablespoons unsalted vegetable broth
  • 4 garlic cloves, minced
  • 1 medium yellow onion, finely diced
  • 8 ounces mushrooms, thinly sliced (I used cremini, white button or baby bella)
  • 1 3/4 cups water
  • 1 1/2 cups wild rice blend (combination of black and basmati rice)
  • 1 teaspoon Spanish paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon chopped fresh thyme (or 1/2 teaspoon dried thyme flakes)
  • 1/2 cup raw cashews
  • 3 tablespoons nutritional yeast
  • 1/2 cup unsweetened almond milk

    INSTRUCTIONS


  1. Set Instant Pot to the Sauté function. Add vegetable broth, garlic, onions and mushrooms. Cook for 5 minutes, stirring occasionally, until onions are translucent and soft. Turn the Instant Pot off.
  2. Add the water, rice, Spanish paprika, salt, black pepper, and thyme. Stir well. Replace the lid, then set the Instant Pot to  Manual/Pressure Cook (at high pressure) for 22 minutes. *Make sure the Instant Pot is set to the “Sealing” position.
  3. Meanwhile, in a high powdered blender, add the raw cashews and nutritional yeast. Process until fine (powder-like consistency). 
  4. Once the Instant Pot is done cooking (the time has elapsed), let the pressure release naturally (about 15-20 minutes). When ready, open the lid, add the cashew powder and almond milk and stir well. Add salt and pepper to taste. Keep this dish in an airtight container in the fridge for up 5-6 days. Makes roughly 4 (1-cup) servings.

Mapo Tofu - an authentic Szechuan Chinese dish. Hot and delicious AF! Recipe can be made without the minced beef/pork. Only issue some may have is to order Doubanjiang, Douchi, and Szechuan peppercorn. They are really must-haves for this.

Just make sure you are getting enough iodine. Here's a good explanation: http://nutritionfacts.org/video/avoiding-iodine-deficiency-2/. I try to have a couple of servings of this kelp seasoning a day (it has 67 mcg iodine per serving). If you have iodized table salt regularly (I don't, unless I'm eating out), you're probably fine — too much can be just as bad as too little so you should be careful.

And make sure you get tested by your doctor. It's a pretty simple blood test.

As someone that has been a hot sauce and spicy food connoisseur for 30 years, here’s where I’m at.

On Amazon get a bottle of “Carolina Reaper Chili Pepper Powder Wicked Reaper World's Hottest Chili Pepper” https://www.amazon.com/dp/B00U5G7IN6/ref=cm_sw_r_cp_api_i_6cpSCb7SYKMC9 or “Scorpion Powder Chili Spice Seasoning Trinidad Moruga Pepper Powder Red Tail” https://www.amazon.com/dp/B00DWG673S/ref=cm_sw_r_cp_api_i_iepSCbR6R628N (the scorpion is my favorite)

The bottle is about $10 and will last you quite a while. Since it is nothing but the pepper itself, you can add it to food to drastically raise the heat level without changing the flavors. Sometimes you want heat but maybe your hot sauce is made with something that may not pair well with the food you’re eating. This is where the powders come in handy. Hot sauces can be pretty pricey and it stinks that with a lot of the sauces what you’re paying for is usually a lot of vinegar or other cheaper ingredients.

Take this, which is a staple in a lot of Asian dishes. (Huy Fong Chili Garlic Sauce.)

Now add one of these to it based on your desired level of, "heat." Stir. Enjoy. (Jalapeno, Habanero, or Ghost Pepper flakes.)

I bought them off of Amazon from this seller. There was detris (twigs and seeds) mixed in with the peppercorns, but the flavor was fine. I would probably refrain buying again and just get them at an Asian supermarket, where I can see the product before I purchase.

Well, I have a 1.87oz (53g) McCormick whole black pepper container.

This, on a household of two persons, with us cooking everyday, typically lasts us more than a year.

There are 9 of these containers in your pound (454g/53g = 9, more or less). So, about 9 years for us.

Ah! but it's ground pepper. It's vastly different than whole pepper grains.

You must use a lot more, because ground pepper typically loses all its potency after a few months - consistent with the 4 months replenishment rate. It's not because you run out of it, but because after that time it's just sawdust without flavour.

It even starts to degrade a few days after being ground - you must use more and more to achieve the same effect as two or three fresh ground grains.

I bought the combo 4 pack and was really happy with them. My favorite out of all of them is the Volcano Dust 3, which has ghost pepper, 7-pot, and scorpion pepper. Black Skull has a rich smoky flavor and is pretty cheap for the amount compared to the others.

These don't give you the tingly/numbing that the szechuans do. It's a nice other option. I recommend breaking them before trying to use a grinder, but it will depend on your particular grinder. These are what I got.

I actually don't see the one I got. A friend of mine usually orders the ghosts along with some trinidad scorpions at the same time and we split them, so it's not in my cart. This one and this one seem to get good reviews from most people. I'm not sure if they changed the packaging or they don't sell the ones I got anymore. Sorry I couldn't be of more help.
